Description
HARVEST: The grapes were hand-harvested in February 2024.
SOIL: Mountain soils. In terms of texture, the soils are loamy, sandy-loam, and gravelly. They are low in fertility and organic matter, with predominance of ancient granite and veins of white and grey quartz, rich in mineral content.
MACERATION: Pre-fermentation maceration for 2 days in stainless steel tanks at low temperature.
FERMENTATION: Alcoholic fermentation lasted 12 days with temperature controlled between 12 and 14°C.
STABILIZATION: Cold stabilization in stainless steel tanks.
MALOLACTIC FERMENTATION: Not performed.
AGING: 8 months in stainless steel tanks in contact with fine lees.
BOTTLING: December 2024
