TECHNICAL SHEET
HARVEST: Olives were hand-harvested before full ripeness, at the beginning of the veraison stage, specifically selected for this product during the March/April 2024 harvest.
OLIVE VARIETIES: 70% Arbequina, 30% Coratina
SOIL: Hill soils with loam to silty loam texture, moderately well-drained and of medium fertility, influenced by maritime conditions due to proximity to the coast of the Maldonado Department.
PROCESS: The olives were cold-processed within 12 hours of harvest in a modern two-phase mill using state-of-the-art technology. The oil was then stored in stainless steel tanks and physically filtered before bottling.
TOTAL ACIDITY: Less than 0.2%
FILTERING: Physical method
STORAGE: In stainless steel tanks at controlled temperature (18°C). Bottled on demand in 500 ml glass containers.
