TECHNICAL DATA SHEET
HARVEST:
The olives were harvested before full ripeness, at the onset of veraison, and manually selected specifically for this product during the March/April 2024 harvest season.
OLIVE VARIETIES:
70% Arbequina, 30% Coratina.
SOIL:
Mountain soils with loam to silty-loam texture, moderately well drained and of medium fertility, with maritime influence due to the proximity to the coast of the Maldonado Department.
PROCESS:
The olives were cold-processed within 12 hours of harvest in a modern two-phase olive mill, using state-of-the-art technology. They were then stored in stainless steel tanks, with physical filtration prior to bottling.
TOTAL ACIDITY (g/l):
Less than 0.2%.
FILTRATION:
Physical method.
STORAGE:
Stored in stainless steel tanks at a controlled temperature (18°C). Bottled on demand in 500 ml glass bottles.
